Recipe: Minestrone

This Recipe is from our Beyond Gluten Intolerance  Book. Soup is a great way to get a nutritiously satisfying meal that does not require bread or pasta! Minestrone is a hearty soup with rich flavors of tomato and beans and fresh veggies make it so delicious! Make some today !

  • 1 onion, chopped
  • 1-3 cloves of fresh garlic
  • 2 stalks of celery chopped
  • 1 1/2 Tbs Olive Oil
  • 4 Cups Fresh Tomatoes
  • 6oz can Tomatoe paste or 8oz sauce
  • 3-8 Cups Vegetable Broth or water
  • 2 Bay Leaves
  • 1 tsp Oregano
  • 2 tsp Basil
  • Pinch of Fennel Seeds
  • 2 Cups or more of fresh chopped vegetables: Zucchini,      carrot, red potato, green beans, Bell pepper, peas, cabbage, parsley, other greens or vegetables.
  • 1 Cup cooked or canned beans: garbanzo, small White or Kidney
  • Salt & Ground Pepper to taste

Saute the onion in the oil in a large 3-6 quart pot with a lid for about 3 min and add spices. Add the rest of the ingredients making certain you have enough liquid to cover all the vegetables. Bring the soup to a boil and simmer on a low boil for about 20 minutes. If you desire a thicker soup carefully puree a few cups of soup in a blender and return it to the pot. Garnish with Parmesan Cheese and parsley.  You can also add precooked meat during the last cooking period on a high boil to reach at least 176 degrees farenheit. Recipe makes about 10 cups and it is even more delicious as left overs!
