Guiltless Pancakes

from Beyond Gluten Intolerance Book by Karen Masterson - Koch 

2 Cups White Flour or Gluten Free Flour

2 Eggs Beaten 

3/4 Cup Yogurt, Greek or Homemade

1/2 Cup Half N Half or other Milk

4 Tbs Honey

1/4-1/2 C Water

1-2 Tbs Olive Oil 

1/4 Tsp Spices like Cinnamon

1 Tsp Vanilla

2 Tbs of Butter Melted 

2 Tsp Baking Powder

1/4 Tsp Salt

Mix well with a whisk.

A Favorite Variation is to add 1 Small ripe mashed banana and leftover cooked quinoa!

Grease non stick pan with oil or butter Cook over medium heat until browned on each side. Enjoy!
